Mi Pueblo officially celebrated its grand opening with a ribbon-cutting ceremony on Wednesday, April 29 at 3 p.m., welcoming city and county leaders along with Chamber and community members to the popular Mexican restaurant opened last year.
Located in the shopping area near the corner of Keats Avenue and 70th Street South, Mi Pueblo first opened in November and has quickly become a favorite dining destination for residents throughout the area.
Cottage Grove Mayor Myron Bailey praised the restaurant during the ribbon cutting ceremony, highlighting the community’s enthusiasm and the need for additional dining options in the city.
“We’re obviously excited because this particular location is another restaurant that we hear so much about in our community that is duly and sorely needed,” he said. “Thank you for investing in our community and offering another opportunity for residents of Cottage Grove and beyond to have a great place to come and have some Mexican food.”
Bailey also shared the story behind Mi Pueblo’s arrival in Cottage Grove, explaining that the opportunity came through a property owner who also owns commercial space in Eden Prairie. Bailey said the landlord believed the restaurant would be a strong fit for the Cottage Grove location and worked with ownership to make the project possible, including expanding parking at the site.
Several local officials attended the event, including Washington County Commissioner Karla Bigham, State Representative Wayne Johnson and Cottage Grove City Council members Monique Garza and Dave Thiede. Tarah Beyer of the Cottage Grove Area Chamber of Commerce and Cottage Grove Strawberry Fest ambassadors also participated in the celebration.
Tarah Beyer, board chair of the Cottage Grove Area Chamber of Commerce, welcomed Mi Pueblo to the community and presented the owners with a commemorative plaque during the ceremony.
“We just want to welcome you so much into the community, and thank you for being a part of the standard,” Beyer said. “If you haven’t tried the chips or the margaritas, I highly recommend.”
Restaurant co-owners Jorge Gomez and Simeon Cuellar thanked the community for its support and shared the restaurant’s operating hours.
“Thank you for giving us the opportunity to open a place here in Cottage Grove,” Gomez said. Located in the shopping area off Keats Avenue and 70 Street South at 7155 Jorgensen Lane South, Mi Pueblo is open Monday through Thursday from 11 a.m. to 9 p.m., Friday and Saturday from 11 a.m. to 10 p.m., and Sunday from 11 a.m. to 9 p.m. The restaurant plans to extend Friday and Saturday hours beginning next month.
